Veggie Journey - Detox - THE Remix

If you have been following my Instagram @djcdevone - you know I am changing up my diet for 21 days.  My good friend Heather, posted a  Vegan - plant based - 21 day challenge.  Now, I am tooooooo greedy and toooo in love with champagne (wine, gin, Jack and never mind get the drift). My challenge is healthier choices with  no meat and no alcohol - "Vegan" you say.... Hmmm, I might not survive, so may give myself a piece of cheese on the weekends if I feel weak - DONT JUDGE ME. However, I feel "Unstoppable!"  Cue - Sia (below)! No matter what this year brings, I feel like we ALL have the power to do anything and it starts within my mind, body and soul. 

Yes,  EVERYONE is on a diet, and EVERYONE is posting a gym selfie and #CLEANEATING. But, I decided to eliminate the items I felt were my personal vices.  If you have a busy social calendar,  you are probably dining and drinking daily.  This journey is about discipline, sacrifice and healthier choices. Everything else is secondary. 

I will post my weekly journey, emotions, recipes and any ideas that I come across! Cheers the soundtrack for this week - to being "unstoppable"!

Week 1

I feel great, my cravings haven't been too bad. However, I feel like this was my time to meditate and cook most of my meals this week. Solitude was what I needed. With the snow storm and gigs cancellations, this was a great time to stay in the house, cook, pray and listen to music. Now, as much I wanted to Netflix and Chill with red wine and a piece of the lovely, crispy and yummy Popeyes biscuits smothered with BUTTA - I stuck to my diet - Le Sigh. Bonus - I also cut back on caffeine and made smoothies. Check out my latest Veggie soup! Super easy!

As for exercise.  Meh, I found it easier to attend fitness classes and not go to a gym (2x). Why you ask, I actually prefer to get an intense workout in a short time that is  music  driven. The great thing is most people are on a diet, detox or journey now - so randomly I ended up with 4 friends at last minute SoulCycle this week! YEAAAAAAH!

 

RECIPE OF THE WEEK

Watch Me... Watch Me (Silento voice) - VEGGIE SOUP

  • 2 tablespoons olive oil
  • 2 cups chopped onions or thinly sliced leeks (whites only)
  • Soup Greens (LISTEN, this is truth and will save you time and money) - contains an onion, carrot, turnip, leeks, dill, thyme, parsley some vary by market)
  • Coarse sea salt and ground pepper
  • 1 Vegetable Broth (box)
  • 1/2 Pumpkin (cleaned)
  • 2 tomatoes
  • Kale (1 bag or fresh bunch)
  • 2 tablespoons of Garlic paste - My favorite is Gourmet Garden
  • Optional - 1/2 peeled garlic clove ( I LOVVVVE GARLIC)

DIRECTIONS

  1. Clean and prep all of your vegetables. Add all ingredients to the slow cooker.  If you decide to not use a slow cooker, just throw all in a pot! Seriously, it is that easy.  WATCH: How to Dice

  2. Turn on slow cooker for 4 hours or cook on stove top for about 1 hour.

  3. Add a little more salt and pepper for your own taste after the soup is done.
